Cut the beef into several pieces. Cut the potatoes into bite-sized pieces. Cut the onion in half crosswise and then cut into wedges (kushigata-giri). Coarsely cut the carrots (ran-giri). Remove the stems and strings of the snow peas, boil in water, and cut diagonally (naname-giri).
Add the vegetable oil to a non-stick frying pan and fry the beef. Take it out of the pan and set it aside after frying. In the same pan, add the onions, potatoes, and carrots. Lightly fry and add the dashi. When it comes to a boil, add the sake, mirin, and sugar. Mix and add the soy sauce.
When they are 80% cooked, add the cooked beef, and simmer. (Don't overcook or the beef will become tough.) Arrange on a dish and add the snow peas.
